Moroccan Chicken and Veggies

4 skinless chicken thighs, cut into 1" cubes
2 16-oz cans garbanzo beans, drained
15-oz canned tomatoes, cut into 1" cubes (about 2 cups)
1 large red bell pepper, seeded, cut into 1" squares
1 cup chopped red onion
1/4 cup raisins
2 Tbs tomato paste
2 Tbs water
3 cloves garlic, minced
2 tsp instant chicken bouillon
1 1/2 tsp ground cumin
2 Tbs peanut butter (organic)
Hot cooked couscous or brown rice (enough for all)
Place garbanzo beans, tomatoes, bell pepper, onion,
raisins, tomato paste, water, garlic, chicken bouillon and
cumin in 5-quart slow cooker. Mix until well combined.
Place chicken pieces on top of bean mixture. Cover. Cook
on low heat setting 6-7 hours, or until chicken is tender.
Stir in peanut butter. Serve over couscous or brown rice.
Serves 6.
Vegetarians: Skip the chicken and add another can of
garbanzo beans.
Free-Range Chicken Fajitas
Marinade:
2 Tbsp olive oil
2 Tbsp lemon juice (fresh)
1 clove garlic, minced
1 1/2 tsp seasoned salt
1 1/2 tsp oregano
1 1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp crushed red pepper
1 1/2 lb. free-range chicken, cut in strips
Fajitas:
1/2 cup cilantro (optional)
1/2 cup chopped onions
1 cup red peppers
1/2 cup sliced green onions
3 to 4 Tbsp olive oil
8 tortillas
1. Marinate chicken at least an hour before making Fajitas.
2. In skillet, quickly sauté vegetables in oil until lightly browned.
3. Remove from pan.
4. Sauté meat 4 to 5 minutes.
5. Return vegetables to pan and toss with chicken.
6. Spoon into tortillas.
CHICKEN & PASTA SALAD
8 oz Tricolor rotini
4 Boneless, skinless chicken-breast halves
2tb Soy sauce, divided Olive oil
1 Med. onion, chopped
1md Green pepper, chopped
1md Red pepper, chopped
1/2bn Fresh broccoli
1t Mrs. Dash
8oz Lo-cal italian dressing,store bought or homemade
1. Cook pasta according to directions, chill in ice water, drain.
2. Blanch broccoli in boiling water, chill in ice water, drain.
3. Use 1/2 soy sauce to season the chicken, heat oil in no stick pan,
brown chicken, and reduce heat and finish cooking. Don't overcook!
4. Slice chicken into 1" strips, turn and cut into 1/4" pieces, place
into bowl with other ingredients except dressing and soy sauce.
5. Mix remainder of soy sauce into dressing and pour over pasta,
chicken, and vegetables. Toss gently and serve immediately.
You might like to leave the pasta, chicken, broccoli un-chilled and
serve it semi-warm.
